VINEYARD
Soil  –  Weathered granite with rocky topsoil, found only in this corner of the valley, called Greywack.
Situation  –  The vines are situated high at 450m above sea level on steep southwest facing slopes.  This tempers the sun, ensuring cool summer conditions and slow ripening of the grapes with high natural acids.
The vines are trellised and unirrigated.
HARVEST
Early March
Hand harvested in the cool morning.
CELLAR
This Blanc de Noir was made from 100% free-run Merlot juice. The juice fermented in a stainless steel tank where it also went through malolactic fermentation. 6 weeks lees contact.
Fermentation Temprature:  15°C
TASTING NOTES
An elegant Blanc de Noir with raspberry, cherry and honeycomb notes on the palate. A soft and smooth mouthfeel and a lingering aftertaste of berries.

Enjoy with light chicken dishes, summer salads or fish.
